Sung Choi Bao

Ingredients

  • Iceberg lettuce
  • 6 dried shiitake mushrooms
  • 2 tbsp peanut/sunflower oil
  • 150g minced pork
  • 150g minced chicken
  • 2 spring onions, sliced finely
  • ½ finely chopped red capsicum
  • ½ can water chestnuts, chopped
  • ¼ cup chicken stock
  • Salt and pepper
  • 4 tbsp. Shaoxing wine or dry sherry
  • ¼ cup oyster sauce
  • 2T light soy sauce

Method

  • Soak mushrooms in warm water for 30 minutes. Separate leaves of lettuce and trim to form cups. Drain and finely chop the mushrooms, discarding the stems.
  • Heat oil and stir fry the minced meats until just browning. Add mushrooms, water chestnuts, red capsicum and spring onions. Add Shaoxing, stock, soy and oyster sauce and cook until liquid reduces.
  • Spoon into lettuce cups and serve.

Serves 4-6
