Salmon & Prawn Miso Parcels

Cook time 12 -14 minutes
Ingredients
- ¼ cup miso paste
- 1 tbl Mirin seasoning
- 1 tbl salt reduced soy sauce
- 2 tsp sesame oil
- 1 carrot cut into matchsticks
- 4cm piece ginger, cut into match sticks
- 4 spring onions cut into matchsticks
- 4 x 200g pieces skinless salmon fillets
- 16 shelled deveined raw prawns of similar size
- 2 tsp toasted sesame seeds
- 1 – 2 bunches broccolini to serve
Method
- Preheat top left oven to 200°C.
- Combine the miso paste, mirin, soy sauce and oil in a small bowl. Combine the carrot, ginger and three quarters of the spring onion in a separate bowl.
- Cut four 30cm squares from baking paper. For each parcel place some of the carrot mixture on the paper, top with a piece of salmon, using a spoon spread some miso mixture over the salmon, place 4 prawns on top and scatter with a bit more of the carrot mixture.
- Bring the two long sides of the paper to the centre and fold over a couple of times.Roll up the ends. Place on the baking tray and bake for 12 -14 minutes, depending on the thickness of the salmon.Set aside for a few minutes, Unwrap and sprinkle over the remaining sliced spring onion and sesame seeds.
- Serve with some steamed rice and greens of your choice.
If serving with broccolini:
Place a little sesame oil in a frypan, add the broccolini stems, fry lightly for a few minutes until they become brighter, add a splash of water, put a lid on the saucepan and cook for a few more minutes until just cooked.
