A footy finals feast for all your best mates. Ditch the store bought party pies and level up with a few of my favourite recipes. The beauty of entertaining with a belling oven is that you can cook everything at the same time, meaning less time in the kitchen for you and more time watching the game and hanging with your pals.

Empanadas

500g chicken mince
1 onion
1 tsp paprika, cumin and chilli powder
3 eggs chopped
1 cup green olives chopped
Lard pastry or store bought shortcrust

Starting up with some delishhhhh chicken empanadas, they may look intimidating but are actually super simple. Best part - you can make these in advance and freeze them.

Mix all your ingredients and cook through on the stove. Next use some lard pastry or store bought short crust and cut into rounds. Spoon in your chicken mix, fold together to form the empanada, egg wash and bake in the oven at 180 celcius until golden. These can easily be pre-prepared and frozen for the big day.

Sausage rolls

500g pork mince
1 apple, carrot and potato grated
1 onion, finely diced
1 tsp mixed herbs
1 egg
1 cup breadcrumbs
A good squirt of tommy sauce
Salt and pepper

Next up - you gotta have sausage rolls and making from scratch is ALWAYS better than store bought. Basically mix it all together and roll in puff pastry. Again, make in advance and freeze! This makes enough sausage rolls for the whole crew. Slice into whatever size you prefer, egg wash and sesame seeds are a must and into the oven they go!

Prawn Brioche Sliders
 

500g cooked prawns, diced
4 pickled gherkins, finely diced
2 tablespoons baby capers, chopped
2 tablespoons dill, chopped
1-2 tablespoons kewpie
Squeeze of lemon
Shredded iceberg lettuce
12 mini brioche rolls

Lastly, some francy little prawn brioche sliders. Now, I don’t want to boast, but I definitely made the brioche. Make your life a little easier and buy them! The filling is a beautiful combo of chopped prawns, gherkins, capers, dill and kewpie (MVP of mayo). I like to grill the brioche for extra smokey flavour - a cast iron griddle like this is perfect and assemble.
